Carefully curated by our Master Blender Alexandre Gabriel, these collections spotlight rare finds, with only a handful of casks chosen to represent a specific vintage and the unique fermentation or distillation techniques of their origin.
Each bottle is a celebration of terroir, capturing the essence of its birthplace. Fermentation of 2 days, Column still, Tropical aging in 200 liter ( read 53 gallon) bourbon casks for 9 years with a further aging in 350 Liter Pierre Ferrand Cognac casks in Cognac, France. Volatile compounds 278 grams per hectoliter, Esters 69grams per Hectoliter. Dosage of 4.5 grams per liter (about 1/4 oz per quart very roughly for metric challenged Americans) Production was limited to 19 casks.
Appearance: Clear, very light old tan in color Light oily coating in glass when swirling, distinct meniscus/edgeline forming with multiple tears forming and a few legs.
First Impression: Briny, Oceanic influence with molasses, dried orange peel, figs, cardamom dried fruit.
Taste: Caramel molasses entry of medium weight, tropical fruit, papaya, curaçao orange notes, black tea, lemon zest, preserved Vietnamese banana notes, with sight honeyed notes. Finish is long, slightly alkali, and a touch metallic with hints of pu err tea Dried orange peel, caramelized sugars, persimmons or medjool dates, slight grassiness, alkali/volcanic minerality, Vietnamese cinnamon, citrus.
